Choose Tacos!

Day 68…

When someone asks me what I want to eat, my mind instantly goes to Mexican food.  I absolutely love tacos and anything about tacos.  If I had to choose one food that I had to eat every single day for the rest of my life…it would be TACOS.   If you really ponder this thought…tacos would be the best bet.  Just think of all the things that you could make with tacos-

Chips & Salsa

Salad without the tortilla

Nachos

Taco Salad

All the veggies by themselves dipped in ranch dressing.

Hamburger (roll it up in the tortilla)

See…the possibilities are endless.  HA HA!!! 

If you have to choose a food…choose tacos!!  They truly will bring a smile to your face. J

Peace brings happiness…

Day 67….

As I was reading tonight an incredible book, The Continuous Atonement by Brad Wilcox, I came upon a couple of quotes that truly spoke to my heart.

Strangely enough, the key to freedom is obedience”. Elder M. Russell Ballard confirmed this when he taught, “Although freedom always brings with it certain risks, challenges, and responsibilities, it also brings real power to those who choose to exercise it wisely.”

I really loved these quotes. They are so true. We usually don’t think that obedience equals freedom but as I think about it more and more, it does. It truly does. I LOVE learning new things or things that bring me to an AH HA moment. I know that I need to study each day to learn and bring myself closer to our Heavenly Father and our Savior. I need to do this every single day and feel the peace that I do right now.

Peace brings me happiness!!!

A sense of peace...

Day 66…

 
I have had something weighing on my mind for quite a while. I have been trying to figure out how to understand and how to get over it, what is meant by all of it, why I cannot let it go or overcome this thing that monopolized my thought process.  Last night, I was talking to one of my close friends and I shared a couple of thoughts and then, I shared with her that I was trying with all of my might to overcome a certain situation that I asked her why I cannot overcome this thing.  I am not the type of person to hold grudges. I try really hard to figure out how to move through a trial and overcome it especially this one.  She asked me last night why I thought that I was holding onto this painful experience.  I had responded to her that I really wasn’t sure. 

Today, she came to speak with me.  She told me that she had been pondering my question and she thinks that she has an answer.  She said that it is because of protection.  I asked her what she meant and she shared some thoughts.  I am protecting myself from getting hurt again.  Oh my goodness…that is the answer.

 I am not crazy.

This is a normal instinct.

I am protecting myself.   

If I forget what happened then I am opening my heart up to be hurt again.   This makes so much sense. I cannot even begin to express how I felt when she shared her thoughts.  It is so true.  If I let it go, I have space in my heart to let it happen again—whether it is intentional or not.  It was like a burden was lifted from my shoulders.  I haven’t forgotten about it nor has that part of my heart been healed but there was this amazing understanding of how I feel.  I am protecting my heart so that she doesn’t hurt it again.  I know that I need to turn this entire thing over to our Heavenly Father so that he can take it away.  I just feel so much better about it. Then, I got thinking even more and received more insight. If I take something out of my heart, I have to replace it. 

I feel a sense of peace knowing that I can get over this.  I really can!!

I love to see the temple…

Day 65

I love attending the temple. The peacefulness that I feel when I am in the House of the Lord calms my soul and touches my heart. This morning, I attended the Mt. Timp LDS Temple with some amazing people—they youth and leaders from our ward. It was a powerful experience and I am so grateful for the opportunity. Love it so much!!! My day started off in the right way and continued on with peace throughout the day.

Trivia


Day 64…


I love learning new things.  I love to learn random trivia.  I love to think.  I have a friend that shares all types of random trivia with me every time she emails me.  It is always at the end of the information or thought that she is sharing with me.  I look for that single line of trivia every time I open an email from her.  You never know when a random bit of information will be useful in a conversation or in a game or in any type of situation.  I absolutely love it.  Hmm…I was just thinking; I am not sure that I have ever shared that with her.  I probably should.  So today, I offer you some random trivia.

 

”Coca cola" is the second most recognized word in the world after “Ok".

Conversations…

 

Day 63

I love having conversations with this little girl. She has a memory like no other. Seriously, she remembers everything. Tonight we went with Mom to pick up a prescription. While we were sitting in the car, Brylie started talking. Our conversation went like this:

Brys: “Do you remember when we went to watch Elle play basketball?

Me: “Yes.”

Brys: She climbed over the fence (the railing at the high school) and gave us huge hugs. It was the night Uncle Mike died.

Me: “I remember that.”

Brys: “Then, you bought me new pajamas because I was sleeping at your house and I didn’t have any.”

Me: “Um, I guess that is what happened.”

Brys: “Elle is on a mission and Ashwey is going on one soon. Do you think that they will forget me? Wait…take a picture of me and send it to them.”

I took a picture of her and she asks to see it.

Brys: “That is a good one. Send it to them.”

Me: “Ok. I don’t think that they will forget you.”

Brys: “Good because I won’t forget them.”

These little conversations with her melt my heart.  Aw…she makes me smile!!!  Love this girl!!

Delicious cheesecake…

 

Day 62…

Have you ever had one of those moments when you want to bake something but you are not sure exactly what it is?  You peruse the many cookbooks in your cabinet, you go through every recipe in your recipe file and then you find it…  The recipe that makes your mouth water.  Well, that happened to me.  Very Yummy & Easy Cheesecake.  Aw…it is heavenly.

Very Yummy & Easy Cheesecake

Graham cracker crust:

1 cup butter or margarine, melted

3 ½ cups of graham cracker crumbs

¾ cup sugar

Mix together and spread in a 13” x 9” pan.

Filling:

12 oz. cream cheese, softened

1 ½ cups Sour cream

¾ cups Sugar

2 teaspoons vanilla

12 oz. Cool whip

Mix thoroughly cream cheese, sour cream and sugar, vanilla. Fold Cool Whip into filling mixture. Pour onto graham cracker crust. Refrigerate for 3-4 hours.

 

Try it…it is heavenly!!!
